Tofu Scramble Breakfast Burrito

I used to eat breakfast burritos with nothing but eggs, cheese and roasted peppers, now I eat tofu and kale instead and you can too! This Tofu Scramble Breakfast Burrito is easy to prepare and can be made ahead of time, perfect for those hectic mornings. I like to add avocado and vegan cheddar cheese in my breakfast burrito (just like the one pictured below) and toast in a skillet with a little bit of oil, creating a crunchy exterior and warm gooey filling.
